Quick Dahl
Soup
Serves 4
Ingredients
400g tin of prepared
brown lentils from your supermarket or health food store
Packet of Mushroom soup or spring vegetable soup
50 g Packet mixed frozen vegetables of your choice
Half pack of frozen ready chopped onions
Two teaspoons from jar of ready prepared garlic
Half teaspoon from jar of ready prepared chilli (or to taste)
A couple of generous shakes of cumin and turmeric (or to taste)
Tin of chopped tomatoes
Teaspoon of brown sugar
Place two cups of
water in a saucepan and briskly stir in the soup mix. Stir and heat until
you are sure the soup mix won't go gluggy.
Add the garlic onion chilli and spices and allow to simmer for 3 minutes.
Add all the remaining ingredients, rinsing the lentils first. Add more
water if need be, but don't drown it.
Let 'em all simmer until the flavours are dispersed and the vegies and
onions have a pleasing texture.
Tastes great the next day, too!
